IP Broccoli Salad

Notes: 

Because the broccoli cooks down some when cooking, 3/4 C is equal to 1 cup of your veggies. Keep in mind that broccoli is a one of your higher carb veggies, so you should combine it with a lower carb veggie when portioning your 2 cups for your meals.

Ingredients: 

4 cups of broccoli florets cut down to small bite size pieces
1/2 C Red onion diced
*2 hard boiled egg whites diced (optional)
1/2 C WF Mayo
1.5 Tsps apple cider vinegar
1/4 C baking splenda


Directions

  1. Bring pot of water to boiling, add broccoli and cook for 2 minutes only, do not overcook!!
  2. Remove broccoli from water immediately and run it under cold water.
  3. Add the rest of the ingredients and stir. 

Servings:  Makes 4 servings

*The protein from the eggs is equal to 1/8 of your dinner protein per serving.
