Island Tripe Stew

Ingredients: 

2 lbs. honeycomb tripe, rinsed, 1 ½-inch squares
Water as needed
1 large onion, wedges
3 stalks celery, 1 ½-inch pieces
2 medium carrots, peeled, 1-inch pieces
2 large potatoes, peeled, 1 ½-inch pieces
2 (8 oz.) cans tomato sauce
2 (15 ½ oz.) cans beef broth
2 c. water
1 ½ tsp. salt
½ tsp. freshly ground black pepper
Optional: flour roux
