4 slices thick-cut bacon slices (¼ pound), finely chopped

1 cup water

8 Tablespoons unsalted butter, cut into 1” pieces

¼ teaspoon salt

1 cup all-purpose flour

4-5 large eggs

1 ½ cups coarsely grated extra-sharp Cheddar (about 5 ounces)

2 Tablespoons grated parmesan

3 scallions, finely chopped

½ teaspoon ground black pepper
