Italian Sausage and Mushroom Manicotti

Ingredients: 

1 tsp olive oil
Turkey Italian sausage links, casings removed
1/2 sweet yellow onion, diced
8 oz button mushrooms, chopped
4-5 cloves of garlic, minced
1/2 tsp dried oregano
Sea salt and freshly cracked pepper, to taste
15 oz Ricotta cheese (I used part skim)
Dash of fresh nutmeg, grated
2 tbsp fresh parsley, chopped
5-6 fresh basil leaves, chiffonade (divided)
4 tbsp Parmesan cheese (divided)
Manicotti shells, cooked per instructions
3 cups of marinara sauce (divided)
1 1/2 cup mozzarella cheese (divided)
