Jambalaya

Ingredients: 

2 cups chicken broth
* 1 large bell pepper diced (I prefer red pepper)
* 1 large onion diced
* 2 stalks celery, diced
* 1 cup uncooked rice
* 1 14 1/2 ounce can of diced tomatoes, undrained
* 1 lb of ham, kielbasa, sausage or andouille sausage
* 3/4 lb of boneless chicken thighs or breast, cut into pieces
* 1/2 lb of shrimp
* 1 tablespoon of creole seasoning - if you don't have creole seasoning see below *
