Japanese Egg Sandwich


Really useful egg sandwich all around. I use it to pack my lunches for university as it is delicious and refreshing.


Shokupan, 2 slices
Hard-boiled egg, 1 egg
Japanese mayonnaise, 1 Tbsp
Salt, pepper and (optionally) a pinch of sugar

  1. Slice the egg and put it in a bowl with the mayonnaise.
  2. Mash the egg and make sure the mayonnaise is well incorporated.
  3. Add in your salt, pepper and sugar and mix well.
  4. Spread the mixture over a slice of shokupan, make sure the bread is thoroughly coated.
  5. Add the other slice on top, and cut in the middle to get two pieces of your egg sandwich.
