Marinade:
olive oil
brown sugar
soy sauce
garlic, ginger or lemongrass as desired

2 large onions, sliced thickly
2-3 lemons

Marinade:

Equal parts olive oil, brown sugar, soy sauce. Add garlic, ginger or lemongrass as desired.

 

Marinate salmon in this mixture for a minimum of 10 minutes, and a maximum of 24 hrs. in the refrigerator.

 

Spray a baking dish or skillet with cooking spray to help onions from sticking. Thickly slice 2 large onions, and layer in the bottom of the baking dish or skillet. Slice two or three lemons, and layer on top of the onions. Place the salmon on top of the lemons and either cover the baking dish with foil, or cover the skillet with a tight-fitting lid.

 

Bake or cook on stovetop until salmon is cooked. Should be pink and flaky. If baking, oven can be anywhere from 350 to 400 degrees, and it will take anywhere from 15 to 40 minutes, depending on temperature and thickness of salmon. It’s a little easier to watch on the stovetop, I usually cook under medium heat.
