Kumara and ginger spiced soup recipe


60g butter
1 onion, diced
1 tsp crushed garlic
1 tsp ginger, finely chopped
½ tsp nutmeg
½ tsp allspice
4 medium gold kumara, peeled and diced
1L vegetable or chicken stock
250ml cream – buy a 300ml bottle and reserve the last 50ml for garnish
1 small kumara for chips
¼ cup plain oil
