Lamb Chops with Smashed Peas and Red Onion Vinaigrette

Notes: 

The vinaigrette is also a great topper for sautéed shrimp, seared steak, grilled chicken, broiled fish, grilled vegetables and boiled potatoes.

Ingredients: 

5 tbsp. olive oil
8 small lamb loin chops (about 2 lb total)
Kosher salt and pepper
1 medium red onion
1 package frozen peas
½ c. fresh mint
2 tbsp. white wine vinegar
¼ c. crumbled feta (1 oz)
