Lasagna Soup


4 hot Italian sausages, removed from casings
2 tablespoons olive oil
1 yellow onion, diced
3 garlic cloves, minced
2 carrots, peeled and diced
2 celery stalks, diced
2 teaspoons salt
2 teaspoons freshly cracked black pepper
2 dried bay leaves
2 tablespoons tomato paste
1 (15 ounce) can crushed tomatoes
4 cups chicken stock
2 cups water
½ pound lasagna noodles
¼ cup parmesan cheese, plus more for sprinkling
¼ cup heavy cream (optional)
¼ cup fresh basil, chopped
1 cup ricotta cheese
fresh parsley, for garnish
