Olive oil
4 streaky rashers, finely sliced
2 red onions, finely chopped
2 cloves of garlic
2 carrots, grated
250g mushrooms, chopped
250g beef mince
250g pork mince
2 tins chopped tomatoes
250ml red wine
Fresh thyme
Fresh basil
Salt & pepper
Lasagne sheets
White sauce

Add oil to pan over a medium heat. Fry bacon until golden. Then add onions, garlic, carrots, mushroom & thyme. Cook for 10 mins or until softened. Preheat oven. Season mince & add. Add tinned tomatoes, wine & basil stalks. Bring to boil then reduce heat & simmer for 1 hour stirring occasionally. Cook on high heat for another 20 mins until sauce is reduced. To assemble lasagne: Spoon third of bolognese into oven dish, then add layer of lasagne sheets followed by third of white sauce. Repeat 2 more times finishing with layer of white sauce & mozzarella & cheese. Place in over for 20-30 mins until golden.
