Leek and Mushroom Pate


Makes about 3-4 ramekins

1 punnet of Chestnut mushrooms finely sliced
About 3 tbs of dried Porcini mushrooms steeped in hot water then diced
1 leeks shredded
2 tbs heavy cream
splash-ette of brandy
Salt and white pepper
Little chicken stock at hand
50 Grams real butter cubed
