Leek and Potato Soup

Ingredients: 

3 cups leeks, julienned
1 cup onion, chopped
1 tablespoon olive oil or butter
3 cups Yukon potatoes, well scrubbed & chopped (I leave the peel on for a more rustic soup but you can peel it if you prefer)
4 cups vegetable stock (make your own! I'll post a DIY soon)
sea salt & fresh ground black pepper to taste
