Lemon Zucchini Bars


For the Bars:

2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup granulated sugar
Zest of 2 lemons
3/4 cup oil (grapeseed, canola, or vegetable)
3 large eggs, lightly beaten
1 tablespoon lemon juice
1 teaspoon vanilla extract
2 cups grated zucchini

For the Lemon Cream Cheese Frosting:
8 ounce block cream cheese, at room temperature
1/2 cup unsalted butter, at room temperature
3 to 4 cups powdered sugar
2 tablespoons lemon juice
1 teaspoon lemon zest
Pinch of salt
