1 onion chopped
1 clove garlic, crushed
1 tsp ground cumin
1 tsp ground coriander
1 cup red lentils
400g diced tomatoes
3 cups vegetable stock
Plain yogurt and mint, bread rolls to serve.
1 heat oil in large saucepan. Add onion and cook over medium heat for 4 mons or until soft. Stir in garlic, cumin and coriander. Cook, stirring 1 min or until fragrant.
2 Stir in lentils, tomatoes and stock. Bring to the boil, reduce heat slightly and cook for 10mins, or until lentils are tender. Serve with plain yogurt and mint and rolls.
