1 tablespoon olive oil
1/2 cup regular barley
1 cup chopped onion (1 large)
3/4 cup chopped carrots
2 cloves garlic, minced
2 teaspoons ground cumin
4 cups reduced-sodium chicken broth
1 cup water
1/2 cup lentils, rinsed and drained
1 bay leaf
1 14 1/2 ounce can no-salt-added diced fire-roasted tomatoes, undrained
6 ounces cooked chicken-apple sausage links, halved lengthwise and sliced
4 cups fresh baby spinach
