Lighter Chicken Parmesan


3 boneless, skinless chicken breasts (about 8 oz each)
1 1/2 cups panko breadcrumbs
1 tablespoon olive oil
1/2 cup grated Parmesan cheese
1/2 cup all-purpose flour
1 1/2 teaspoons garlic powder
3 large egg whites
1 tablespoon water
2 cups tomato sauce, warmed (store-bought or homemade (see recipe below))
3/4 cup shredded mozzarella
1 tablespoon chopped fresh basil

Tomato Sauce:
1 28-oz can diced tomatoes
4 garlic cloves, minced
1 tablespoon tomato paste
1 teaspoon olive oil
1/8 teaspoon red pepper flakes
1 tablespoon minced fresh basil
