Loaded Baked Potato Scones


3 cups all-purpose flour
1 tablespoon baking powder
1 teaspoon salt
½ cup (1 stick) unsalted butter, super cold and diced
½ cup white cheddar, shredded
6 slices bacon, cooked and crumbled
1 cup leftover mashed potatoes (or made fresh, but cooled)
¾ to 1 cup buttermilk
1 egg yolk, beaten with a splash of water
1 cup sour cream
¼ cup sliced green onions
2 garlic cloves, grated
salt and pepper
