Lotus Root and Pork Ribs Soup

Pork ribs 1 Ib
lotus root 1 Ib
3 slice of ginger
honey dates 2
dried dates 8-10
salt for taste

Cut the pork ribs into small pieces. Peel off the skin of lotus root and cut the lotus root into slices. Soak the honey dates and dried date into warm water for 5 minutes. Blanch the ribs in boiling water, then remove and drain. Bring the pot of water to a boil. Add in all the ingredients. Cook in the high heat for 20 minutes and then reduce to low to medium heat and simmer for half an hour or until well cooked. Add salt to taste.
