100g / 3.5oz almond meal/flour
100g / 3.5oz desiccated/shredded coconut
2 tsp baking powder
2 tbsp granulated sweetener of choice or more, to your taste
1 tsp psyllium husk
50g / 1.8oz butter melted
3 eggs
2 lemons zest and juice
Lemon Cream Cheese and Yoghurt Icing
100g / 3.5oz cream cheese softened
100g / 3.5oz natural yoghurt unsweetened
2 tbsp lemon zest
1 tbs granulated sweetener of choice or more, to your taste
