Low-fat Almond-infused Banana Bread

No oil, butter, or refined sugar added. Adapted from a recipe posted on Facebook.

Ingredients: 

2 c whole wheat flour
1 t baking soda
1/4 t salt
1/2 c unsweetened applesauce
1/2 c honey
1/8 c granulated stevia (or omit and increase honey to 2/3 or 3/4 cup)
3-4 T almond milk
2 eggs, beaten
3 mashed overripe bananas
1/2 t almond extract


  1. Preheat oven to 350 degrees F. Grease a 9x5 loaf pan.
  2. Combine dry ingredients and wet ingredients separately, then combine and stir just to moisten.
  3. Pour batter into pan and bake for 60 minutes.
