Notes: 

Lye water or kansui can be found in asian markets. But all is not lost if you don't want to bother with lye water. You can use eggs and bicarbonate of soda in its place.

Preparation time: 30 minutes
Resting time: from 2-5 hours depending on temperature
Cooking time: 5 minutes

2 cups bread flour
1 teaspoon fine salt
With

1/2 cup lukewarm water approximately
1 teaspoon lye water

OR

2 eggs at room temperature, beaten well
5-6 tablespoons lukewarm water
1/2 teaspoon baking soda
