Mandarin Pasta Spinach Salad With Teriyaki Dressing


8 oz bowtie pasta noodles
4 C spinach leaves
1/2 C craisins
1/3 C cashews or pine nuts
14 oz mandarin oranges - drained
1/4 C cilantro leaves - roughly chopped

1/3 C teriyaki sauce - the thinker the better
1/3 C rice wine vinegar
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
1 T sugar
1/2 C oil - vegetable oil, canola oil or olive oil

  1. Cook pasta according to package instructions, drain and rinse with cold water. Set aside
  2. Prepare the dressing. In a jar combine all dressing ingredients. Cover until ready to use.
  3. In a large bowl toss together pasta, spinach, craisins, nuts, mandarin oranges, and cilantro. Just before serving pour dressing over salad, toss and serve.
