For one overstuffed big loaf, or one big loaf partially full and two smaller loaves
2 cups flour
3/4 cup white sugar
1/2 cup loosely packed brown sugar
1 tsp cinnamon
2 tsp baking soda
1/2 tsp salt
1/2 cup mashed mango or mango juice
1/2 cup vegetable oil (or applesauce if you want to cut out some of the fat, but it won't be nearly as moist.)
3 eggs
1 tsp vanilla extract
2 fresh mangoes, diced (about 2 cups worth, or 3 cups if you want it really mango-y)
1 cup chopped walnuts
Optional: You can substitute 1/2 cup yogurt or sour cream for the 1/2 cup mango nectar or juice
