Marinated Octopus with Fennel and Black Garlic

Serves 4-6 as an appetizer or 2 as a main course

Ingredients: 

For the poach:
3 pounds baby octopus fresh
1 none onion, diced
2 lemons, finely sliced
0 sprigs rosemary a few
1 handful salt

For the marinade:
5 cloves garlic
2 lemons, juice and zest
2 oranges, juice and zest
1 teaspoon salt generous
2 cups olive oil extra virgin

For the fennel:
1 none bulb fennel, finely sliced
1 bunch cilantro, chopped fresh
4 tablespoons marinade oil

For the black garlic puree:
1 cup milk
1 none head black garlic
