Meat Loaf: Basic Beef Pressure Cooker/

1 & 1/2 lb ground or chopped beef
1 t salt
Ground black pepper
1 medium-sized onion, minced
1 garlic clove
2 slices bread
2 T parsley
1 Egg
2 T homemade chicken stock
2 t Worcestershire Sauce
2 T olive oil
1 C Tomato Sauce
1 C Water

In a bowl, combine meat, salt and pepper, garlic, parsley, onion, egg, Worcestershire sauce and chicken stock. Soak 2 slices of bread in water, squeeze dry and add to mixture.
Shape meat into two small loaves, wrapping each in wax paper.
Chill for several hours to firm.
When meat loaves have firmed up, heat oil in pressure cooker and brown loaves on all sides. When done, transfer loaves to cooker’s basket.
Set oil aside and combine water with tomato sauce. Season mixture a dash of salt and pepper. Spread it over meat loaves.
Lower basket into the pressure cooker, lock lid and bring to pressure. After about 10 minutes, lower heat and cook for 15 minutes over high pressure.
Release pressure using ‘quick release’ method. Slice meat and serve.
