Mexican Chicken Casserole

4 tablespoons canola oil, divided
2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes, optional

6 chicken thighs or 3 chicken breasts
1 can corn, drained
1 can black beans, drained
2 cups salsa
Shredded cheese to garnish
Green onions, sliced, to garnish

  1. Marinate chicken in seasoning for 10-20 minutes
  2. Cook chicken in pan for about 5 minutes to sear exterior, and lightly cook interior
  3. Let chicken rest for 5-10 minutes, then shred using two forks
  4. Combine shredded chicken, corn, black beans, and salsa in a casserole dish
  5. Top with shredded cheese
  6. Bake in oven at 350F for 20 minutes
  7. Garnish with sliced green onions and serve
