2 cups long grain white rice
1 28 oz can whole peeled tomatoes
1 medium yellow onion peeled and roughly chopped
1 large jalapeƱo seeds removed and chopped
2 cups vegetable broth can use chicken broth
4 cloves garlic minced
1 1/2 teaspoons kosher salt
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/8 teaspoon cayenne pepper
2 tablespoons vegetable oil canola oil, or olive oil
2 tablespoons fresh lime juice
1/4 cup chopped cilantro
1 large tomato seeds removed and diced
