For the base:
100g plain digestive biscuits
50g butter

For the filling:
250g mascarpone
250g cream cheese
50g icing sugar
1 tsp vanilla bean paste

For the lemon curd:
200g caster sugar
Grated zest of 4 lemons and juice of 3–4 (approx 120ml)
4 large egg yolks
100g butter, diced
