Mora Jam - All Natural

Notes:

Now that we live in Ecuador, we are blessed with year round abundance. So canning and freezing food is very foreign, fresh is always available. This recipe calls for no pectin, lemon juice or any preservtives so it' a straight up jam.

Mora is the Spanish name for BlackBerry or in some cases Mulberry, whatever it is it tastes great and looks like raspberry, have I got you confused yet. This will keep in the fridge for a couple of months.

Ingredients:

2 pounds Mora berries
2 1/2 cups sugar

CAREFULLY clean and wash the berries, remove the top leafy part as well.

Place berries in food processor run until the berries are a smooth mash. Transfer to a large saucepan.

Add sugar to mixture a d cook on medium heat for about 1 hour. Mora has a large amount of water and it takes time to cook down, stirring constantly until you can run a spoon over the top of the jam and leave a line.

Pour into sanitized glass jars.
