Moroccan Grilled Lamb Kefta Kebab


I have taken several different recipes and melded them into to this one and used a food processor to create a true sausage like consistency. Served with coconut rice and a nice tomato cucumber, onion and feta salad.


1- 1 1/2 pounds ground lamb
1/4 cup loosely packed chopped parsley
1/2 cup loosely packed chopped cilantro
1 tablespoon chopped fresh mint (optional)
1 tablespoon sweet paprika
1 teaspoon ground cumin
1 teaspoon ground cinnamon
1/2 teaspoon allspice
1/8 teaspoon ground nutmeg
1/8 teaspoon cayenne
1 teaspoon salt
1 cup red onion chopped
olive oil as needed

1) Soak wooden skewers in a shallow dish of water while preparing the meat.

2) In a food process add ground meat and remaining ingredients. Mix until you get a sausage like consistency.

3) Take a palmful of meat and press it around the middle of a skewer, then roll it lightly on a cutting board or between your palms to form an even "sausage" around the skewer about 6 inches long. Repeat with remaining skewers and meat.

4) Grill over high hear to create a carmelization to the outside of the meat.

5) Serve with rice, greek salad and pita or naan. And our homemade tzatzki sauce.
