Mrs. Tweiggenbotham's Lemon Blueberry Tea Bread

3 c flour
3 tsp baking powder
1/2 tsp baking soda
1 tsp salt
Grated rind of two lemons (only colored part of peel)
1/4 c soft butter
3/4 c sugar
1 large egg
1 c milk
1/2 c fresh lemon juice (about 2 lemons)
1 c fresh blueberries, or frozen, partially thawed

  1. Prehead oven to 350. Spray 9x5x3 loaf pan
  2. mix flour, baking powder, soda, salt and lemon rind. Set aside.
  3. On medium speed cream butter and sugar until fluffy.
  4. add egg and mix well.
  5. On low, add flour, a little at a time. Then add milk and lemon juice. Mix until blended.
  6. Gently fold in blueberries
  7. Pour batter in loaf pan and bake 60-65 min
  8. Cool 5 min then turn out onto a cooling rack and cool completely.
