Mushrooms - Tuscan-style Mushrooms

Ingredients: 

8 Large mushrooms suitable for stuffing
1/2 lb. bulk Italian sausage
1/2 cup plain breadcrumbs
1/2 cup shredded mozzarella
1/4 cup Parmesan cheese
2 lightly beaten eggs
1/4 cup fresh chopped parsley
2 T dried sweet basil
2 T dried oregano
1 t salt


  1. Preheat hove 325 Degrees
  2. Brown sausage in pan; drain off oil and discard. Spin sausage briefly in blender with parmesan cheese, parsley and herbs until txture is smooth. Do Not over-spin! 
  3. Place into large bowl and blend with eggs, breadcrumbs, mozzarella and salt.
  4. Scoop mixture into mushrooms.
  5. Bake for approx 45 min. Serve immediately
  6. Note these can be prepped up to 12 hours in advance.
