My Mother's Banana Bread

This recipe is what has been used in my family since I was old enough to eat banana bread. It tastes really good! I like to add vanilla, cinnamon and/or nutmeg to mine.

Prep Time: 15 mins.
Cook Time: 45 mins.
Serves 8
Yield 1 loaf


1/2 cup melted butter
1 cup sugar
2 cups flour
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups mashed bananas
chopped nuts, to taste (optional)

* Mix all ingredients together thoroughly. Be careful not to overmix; a few lumps is okay.
* Pour into a greased and floured loaf tin.
* Bake in a 180 C / Gas mark 4 oven until a skewer inserted in centre comes out clean (about 45 minutes).
