Nadine's Love Potion #15 Chili

This was my favorite chili from my neighborhood's 2012 Chili Cheeks Cook Off. Big thanks to Nadine for sharing the recipe!


2lbs Boneless Skinless Chicken Breasts
2- 14 oz. cans navy beans undrained
1- 15 oz. can diced tomatoes
1-12-14oz can of corn
2- McCormick white chili seasoning packets
4-8oz cups of water
1 bunch of cilantro
1 squeeze of lime and lemon
liberally season stock with garlic powder, adobo seasoning, dried crushed red pepper and black pepper
1 Serrano pepper
1 Jalapeno pepper
1 red onion diced

Add chicken, beans, tomatoes, corn, water, McCormick and dry seasonings to large soup/stock pot on stovetop. Bring to a boil then cover and reduce to low simmer.

In a blender, add 1 cup of water 1tbsp. oil, full bunch of cilantro, lemon, lime and serrano, jalapeno peppers, and chopped onions. Using chop option blend until smooth.

Add to simmering chili, stir and cook on low heat for 2 hours. Taste while adding seasoning to avoid adding too much salt.
