New York Style Cheese Cake

Ingredients: 

6 Honey Grahams, crushed (about 1 cup)
3 Tbsp. sugar
3 Tbsp. butter or margarine, melted
4 pkg.(8 oz. each) Cream Cheese, softened
1 cup sugar
3 Tbsp. flour
1 Tbsp. vanilla
1 cup Sour Cream
4 eggs

8 caramel candy
1/4 c heavy cream


Directions

Heat oven to 325°F.
Line springform pan with parchment paper. Mix graham crumbs, 3 Tbsp. sugar and butter; press onto bottom of pan. Refrigerate for 10-15 mins. Meanwhile, beat cream cheese, 1 cup sugar and vanilla with mixer until well blended. Add sour cream; mix well. Add eggs, 1 at a time, mixing on low after each just until blended. Pour over crust. Wrap bottom of springform pan in foil lifting sides of the foil to create a dam. Put pan on top of sheet pan. Pour hot water into the sheetpan about 1/2 inch. Bake 40 min. or until center is almost set. When baking time is done turn off heat and use a wooden spoon and wedge onto oven door leave cheese cake in the oven for 40 minutes. Remove cheesecake from oven. Refrigerate 4 hours.

To make caramel sauce: unwrap caramel and add the heavy cream in a pan on low heat. Stir until the caramel is melted. Pour caramel on the cheesecake.
