North Indian Aubergine Curry


North Indian Aubergine curry – serves 2

1 medium aubergine cut into cubes
1 small courgette sliced into rounds
1 medium red onion finely chopped
50 grams of fresh garden peas
3-4 cloves garlic minced
1 tps minced ginger
200mls veg stock
1 tps cumin
1 tps turmeric
1 tps chili powder
1 tps coriander powder
2-3 curry leaves
2 cloves
1 small stick of cinnamon
1 tbs palm sugar (or Mango Chutney will do)
1-2 tbs coconut cream
