Okinawan Sweet Potatoes with Caramelized onion and Ginger

Notes: 

How to Caramelize an onion:
Dice two onions to a fine dice and add to a pan on medium to low heat with 1 tbsp butter and ½ tbsp oil.
Add ¼ tsp salt to coax the onions to soften and flavor throughout.
Cook on low heat for 10 minutes til softened. Add 1 tbsp. brown sugar to onions, and ¼ tsp ground ginger (you can add finely shredded fresh ginger as an option) Continue cooking until onions are a golden brown to bronze.

Keep a few onions reserved to add on top of Sweet Potatoes for Garnish.

Ingredients: 

4 lb Okinawan sweet potatoes
3 TBSP Butter
1/2c coconut milk
1/4 tsp salt
1/4 tsp pepper
caramelized onions


Place 4 lbs. Okinawa Sweet Potatoes on a cookie sheet and roast in the oven for one hour, at 400 degrees. They Should be done if you can pierce potato with no resistance.  When potatoes are cool enough, scoop potatoes into a large bowl. Heat 3 Tbsp butter with ½ cup coconut milk and add to bowl, add ¼ tsp salt and ¼ tsp pepper or to taste. Using a mixer, whip until smooth, if needed, add more butter one tbsp at a time, and coconut milk to desired consistency. Add Caramelized onions and stir in. Serve warm.
