Old-Fashioned Meatballs

Good mix of beef & pork. Use only a little water and and about 1/3 cup ricotta cheese. Cooked without tomato mixture, and added jarred marinara for the last 5-10 minutes of cooking. Makes 12-15 meatballs.


1 pound ground round (15 percent fat)
1/2 pound sweet Italian sausage
1/3 cup plain dry bread crumbs
2 eggs, lightly beaten
2 large garlic cloves, minced
1/3 cup grated Pecorino Romano cheese
1 3/4 cups canned crushed tomatoes in heavy purée
