Oven Fried Chicken Tenders


These are excellent. Simply, easy to clean up and healthy. We used to spend hours frying up chicken fingers, well no more. Try it!


2 lbs chicken breasts
1 cup all purpose flour seasoned with salt and pepper
2 cups panko bread crumbs
1 egg & 1/2 cup milk for egg wash
Choice of Spices:
A) Cheesy: 2 table Parmesan Cheese
B) Italian: 2 teas Italian Seasoning
C) Spicy: 1 teas cayenne pepper 1 teas cumin
D) Traditional: 1 teas thyme, 1 teas parsley
E) Tropical: 1/2 cup sweetened shredded coconut

  1. Cut Chicken breats into small tenders
  2. Line baking sheet with foil and spray with canola oil. We originally did this on a wire rack but it makes a bigger mess so now we stick to foil.
  3. Pre-heat overn to 350.
  4. Dredge chicken in seasoned  flour
  5. Then in egg wash
  6. Finally coat in panko with chice of spices mixed in
  7. Place tenders on foil pan
  8. Lightly spray canola oil on chicken tenders.
  9. Bake at 350 for 10- 15 minutes and then turn over, finish baking for another 10-15 minutes
  10. Serve with your favorite dipping sauce.
