Over-Stuffed Spinach and Ham Pie

Very yummy! We made half the recipe as a side dish and made it without the crust. The flavor is very much like a spinach souffle.


2 (10 ounce) packages frozen chopped spinach, drained and chopped
2 tablespoons olive oil
2 onions, chopped
3 garlic cloves, finely minjced
3 eggs
1 (8 ounce) container ricotta cheese
1/3 cup Parmesan cheese
1/3 cup chopped ham
Salt and pepper
1 (9-inch) double-crust pie pastry
