Paleo Peach Shortcake


For the shortcake:

1 cup cashew meal, *
1/4 cup tapioca flour
2 tablespoons coconut flour
1 teaspoon baking powder
pinch of kosher salt
3 tablespoons cold coconut oil, should be hard
1 egg
1 tablespoon honey
2 tablespoons non-dairy milk, of your choice
1/2 teaspoon pure vanilla extract

For the peaches:

2 peaches, ripe and sliced
2 tablespoons pure maple syrup, or honey, divided

For the whipped cream:

cream from a can of coconut milk, full fat
1/2 teaspoon pure vanilla extract, optional
