Pan-seared Oven-roasted Chicken

Ingredients: 

Chicken breast
Coarse salt
Pepper
Garlic
Peanut Oil
Herbs, if desired


  1. Preheat oven to 400.
  2. Flatten chicken to 1/2 inch, uniformly.
  3. Season one side (skin side, if skin remains) with salt and pepper.
  4. Heat pan with peanut oil until sizzling.
  5. Place chicken seasoned side down until that side is golden.
  6. Add garlic and any herbs to non-seasoned side.
  7. Add pan to oven and cook for eight minutes.
