Parmesan Chicken Manicotti


My first experience with stuffing pasta shells and apart from the time it took to do that part, this recipe was made very quickly. I also doubled the recipe without any problem. Although I used the sauce described in the recipe, both Julia and Jordan said it would have been better with my sauce, even after I reminded them that my sauce is a ground beef sauce and these shells are stuffed with chicken. Go figure! Definitely worth making again but I will stuff the shells with more filling next time around.


7 pieces Manicotti, cooked according to instructions
1 cup part skim Ricotta cheese
½ cup shredded Parmesan cheese
1 cup shredded cooked chicken
1 egg
1 teaspoon oregano
salt and black pepper
1 can Italian style crushed tomatoes
2 tablespoons grated Parmesan cheese
1 tablespoon chopped fresh basil leaves
¼ cup Parmesan cheese
6-8 basil leaves
