Parsnip and Leek broth

Ingredients: 

3 medium parsnips, peeled, roughly chopped
3 leeks trimmed, washed and roughly chopped
1 small spud peeled and halved
About 1 litre of good Chicken (or veg) stock
2 handfuls of chopped curly parsley
Salt and pepper
Cream to finish
Fresh thyme
