Passover Apple Cake

Optional:Spoon a lemon glaze over cake.

Ingredients: 

4-5 Granny Smith apples
5 tbs cake meal
2 tsp cinnamon
4 eggs
2 cups sugar
1 cup oil
1/4 cup water, lemon juice, or combination of both
2 cups cake meal
1 cup potato starch
3 tsp baking powder
1/4-1/2 tsp salt
chocolate chips
Extra oil & potato starch for the pan


  1. Preheat oven to 350. Grease/dust pan with potato starch. 
  2. Peel, core, & dice apples into 1" cubes. Set aside in a medium-sized bowl. 
  3. Combine cake meal & cinnamon,  
  4. Sprinkle  mixture over apples, toss to coat. Set aside. 
  5. In a large mixing bowl, beat eggs & sugar until light. 
  6. Add oil & continue beating for additional 10 minutes. 
  7. Add water or juice. 
  8. In a separate bowl, sift cake meal with potato starch, baking powder, & salt. 
  9. Add the sifted dry ingredients to the beaten egg mixture & beat at low speed until blended. 
  10. Fold in diced apples & chocolate chips, nuts, or raisins. . 
  11. Bake 1 1/4 hours or until toothpick comes out clean. 
  12. Pour in batter & bake at preheated 350 degree oven  
  13. Optional: Spoon a lemon glaze over cake. for
