Passover Bars

Ingredients: 

1 1/2 cups + 2 tbs sugar
2 large eggs
1 cup vegetable oil + extra for greasing pan
3 1/4 cups ground almonds, almond meal, or almond flour
1/4 cup potato starch
1 cup mini chocolate chips
1 cup nuts
&/or white chocolate chips (pecans or walnuts)
Optional: 1/3 cup dried cranberries &/or golden raisins


  1. Preheat oven to 375. 
  2. Grease 9x13 inch baking pan with oil & cover bottom & sides  with parchment paper. Grease all parchment paper. 
  3. In a large bowl, beat sugar, eggs, & oil with electric mixer on medium speed, or mix well with wooden spoon until combined. 
  4. Add ground almonds & potato starch & mix well. 
  5.  Add chocolate/white chips, nuts, etc & mix. 
  6. Scoop dough into the greased pan & spread evenly with a spatula. 
  7. Bake 30-35 minutes, or until the edges are brown & toothpick comes out with just a few crumbs. 
  8. Let cool. 
  9. Lift out parchment paper & then cut into squares or bars. 
  10. Makes 24 2" square bars.
