Ingredients: 

Makes 12 individual tarts

For the pastry:

1 3/4 cups all purpose flour
3/4 cup (1 1/2 sticks) unsalted butter
3/4 tsp. kosher salt
1/2-3/4 cup cold water
For the custard:

1 small lemon
1/2 cup water
3/4 cup sugar
1 small nub of nutmeg or 1 cinnamon stick
1 1/2 cups whole milk
1/2 tsp. kosher salt
1/2 cup all purpose flour
2 eggs
4 yolks
