olive oil cooking spray
1 cup egg whites (6 eggs)
2 whole eggs
1/8 tsp cinnamon
1/4 tsp splenda (1 package)
1/2 cup low-fat cottage cheese
2 peaches, diced
1/4 cup pecans, crushed
1/2 cup low-fat plain yogurt
Preheat a large non-stick frying pan on medium heat. Lightly coat with spray. Whisk egg whites, eggs, cinnamon, and splenda together in a mixing bowl. Pour mixture into the pan. Cook for a couple of minutes until the top of the mixture begins to bubble. cook for 1 minute until bottom is golden brown. Flip the omelet and cook until the other side is golden brown.
Transfer omelet to a plate. Mix cottage cheese, peaches, and pecans together and place half of the mixture onto one side of the omelet. Fold the omelet over to cover contents. Use remaining peach mixture as a fruit side, and garnish omelet with yogurt and serve. (cook half at a time or split final product for two servings)
