Peanut Butter Cheesecake Pudding Cookies

Excellent! I didn't dip in chocolate, and didn't miss it. Used sugar-free, fat-free pudding mix.


1/2 cup peanut butter (I like crunchy)
1/2 cup butter, softened but still chilled
3/4 cup brown sugar
3/4 cup granulated sugar
2 eggs
1 tsp baking soda
1 tbsp hot water
2 tsp vanilla extract
2 1/4 cups flour
3.4 oz package cheesecake instant pudding mix
2-3 cups melting chocolate for dipping
